Happy Monday

Happy Monday Everyone! Did you have a good weekend? I did! It was full of food, friends, and (of course) I fun summer pedicure!

I love my neon orange toes. Fun and bright, just like summer should be! They make me smile. 🙂   I also started this morning with a gym bootcamp workout! No matter how tired I may be when I wake up, I am ready to take on the day after a workout (If only I had the will power to do that every morning!).

And, naturally, I was starving post-bootcamp, so it was smoothie time! I had delicious and refreshing green smoothie made with bananas, mango, almond milk, and green protein powder. 

So pretty! And yes, I drink my smoothies out of beer glasses. It just tastes better that way. And today was a busy day for me! This afternoon I finished my classes and need to pack! Tomorrow morning (bright and early) I’m headed to Charlotte/Davidson, NC!

I will be there for a little over a week visiting Marshall and seeing lots of my college friends! Davidson is only about 20 minutes north of downtown Charlotte, so it’s closer than the map looks. And that lovely Lake Norman you see? I hope to be spending much of my time on that lake, in a boat, getting my tan on. #ilovesummer

And since my trip is tomorrow (!!), my food supply is running dangerously low. But I like it that way, so there’s nothing left to spoil while I’m gone! But because of this, my meals are very boring. BUT, I do have a fun, summer inspired meal saved up to share!

Spring Green Salad with Marinated Mahi Mahi, Roasted Cherry Tomatoes, and Goat Cheese!

#1: Begin with a nice filet of mahi mahi and let sit in your favorite marinade for 1-2 hours.

Then you just put your fish on a foil lined cookie sheet in a 350 degree oven for 15 – 20 minutes (depending on the thickness of your fish). Super simple, yet super delicious. And while you have the oven on…..

 You might want to get some local cherry tomatoes, drizzle them with a little olive oil, balsamic vinegar + salt + pepper, and roast then for about 10 minutes. That would be a lovely addition to the salad. *Bonus Points:* go get tomatoes from your local farmers market. Farmers markets are the best!! Especially in the summer! Everything is in season!!

 Then, put everything atop a good helping of spring green mix, add some goat cheese, drizzle on your favorite summer dressing, and dig in!
