Healthy Haricot Verts

It’s time for a veggie recipe!!

During the holiday season, vegetables are super important (in my opinion). When you’re stuffing your face with buttery cookies and rich meals, you’re going to need to balance it out somehow so you can still fit into your skinny jeans the next morning. Vegetables have been and will be the main attraction for my meals for the next week and a half before I visit my boyfriend’s house and fill it with cookies.

And to get the most bang for your buck, add vegetables to the dinner meal!! That’s what I made sure to do at Thanksgiving! No, my vegetables were fresh and not coated in cream sauces or cooked in butter. Just some fresh veggies with a little bacon for flavor!

Bacon is never wrong in my book! Green beans pair perfectly with bacon!

Sauteed Green Beans with Bacon

  • 1 lbs. center cut bacon
  • 1 large onion, sliced
  • 1 tablespoon olive oil
  • 2 lbs. frech green beans (aka: haricot verts)
  • 1/2 cup slivered almonds

In a large skillet over medium heat, cook the bacon until crispy on both sides. Drain on paper towels. Once cool, crumble and set aside.
Drain the excess grease out of the skillet and turn down the heat to medium low. Add in the onions and cook slowly until caramelized and golden brown, about 20 minutes. Stir occasionally. Once cooked, remove from pan and set aside.
Clean pan and heat olive oil over medium heat. Once hot, add in the green beans and saute for about 20 minutes. (Note: if you pan is not large enough to easily stir the green beans, you will want to split the green beans into two pans).
When becoming tender but not fully done, add in the slivered almonds, crumbled bacon, and caramelized onions and cook for another 5 minutes, or until the green beans are just tender and almonds are brown and toasted.
Serve immediately!
