Homemade Chocolate Granola

Granola is one of my favorite things.

DSC_0426 As a topping for yogurt, oatmeal or ice cream, it always adds the nice crunch I am looking for.

One of the things I do not love about granola though is the price tag in the grocery store. At upwards of $5 or $7 for a small bag, it is not exactly light on my grocery budget.

However, it is quick and easy to make at home! It is perfect to make on one of these abnormally rainy, cool spring-time days. For it to come together, combine:

OATS

Oats COCONUT FLAKES

Coconut Flakes SLICED ALMONDS

Sliced Almonds FLAX SEEDS

Flax Seeds GOJI BERRIES

Goji Berries CACAO NIBS

Cacao Nibs COCOA POWDER

Cocoa Powder Stir everything to combine….

Granola Mix Drizzle in coconut oil, vanilla extract, and maple syrup

Wet Mixture Stir again…

Granola Then bake!

Simple as that!

Ingredients

  • 5 cups old fashioned oats
  • 5 oz. sliced almonds (1.5 cups)
  • 1.5 cups shredded unsweetened coconut
  • 1/2 cup flax seeds
  • 1/4 cup cacao nibs
  • 1/4 cup + 1 Tablespoon goji berries
  • 1/4 cup (heaping) cocoa powder
  • 2 teaspoons vanilla
  • 1/3 cup coconut oil
  • 1/4 cup maple syrup
  • 2 tablespoons light brown sugar

Directions

Preheat oven to 250 degrees. Spray a large cookie sheet with coconut oil spray and set aside.

In a large bowl combine oats, almonds, coconut, flax, cacoa nibs, and goji berries. Stir to combine.

In a measuring cup, combine the vanilla, coconut oil, and maple syrup. Drizzle over oat mixture, and stir well to evenly coat everything. Spread mixture evenly in prepared cookie sheet and spray top of mixture with another coat of coconut oil. Sprinkle brown sugar evenly over the granola.

Place in over for 50 – 60 minutes, stirring granola every 10 minutes.

Remove from oven and allow to cool before storing in mason jars of air-tight containers.
