It’s been a long time since my last post…. that’s just what happens during finals time! But all of my finals are done and I get a nice 10 day “summer break” to be home!!
What have I done since I’ve been home?! I’ve slept… a LOT! Finals time seriously made me sleep deprived! But I was able to get a nice 2 mile run in this morning! Have to keep up with my fitness!
Nothing too special is going on, except I have exciting dinner plans for tonight! The meal will be delicious and healthy! (Details to come tomorrow!)
But in the mean time, I’m going to give you a fun “tutorial” of one of my favorite simple and quick desserts!
Ok, I know making banana pudding is not rocket science, but the layering processes can be a little tricky sometimes, so we’re going to go over that today!
But first, the ingredients!! Obviously you will need bananas:
And some vanilla wafers! But please, try to get a less processed kind…the one’s in the ultra bright yellow box have some unnecessary ingredients. I chose this variety for my pudding:
Yes, there are still artificially flavored… but not everyone has time to make their own vanilla wafers.
Moving on: and make yourself up some pudding! Homemade would be ideal, but instant is a quicker option (made with skim milk please)!
Now for the layering. In a large soufflé plan, spread one layer of cookies on the bottom:
Then cover with about 1 cup of the pudding mixture
Next, the first banana layer
Put a small amount of pudding on top of the bananas, and now time for the second cookie layer!
And cover with the rest of the pudding!
Ok, it’s not the prettiest thing ever, put it is darn delicious! And so comforting. Like a really good comfort meal dessert!
Trust me, this won’t last very long…
