Late Night Snacks

My mini vacation in North Carolina ended this weekend, so I flew back to real life slash work-land for the next 1.5 weeks! Since I have been back, I have been non-stop working… Like 8 am sunday to 3:30 am monday morning…. needless to say I am exhausted!!

But, during my long work time, I had to re-fuel my brain with a healthy snack!

Half of a toasted cinnamon raisin ezekiel english muffin spread with some locally made strawberry cream cheese. Filling and satisfying! And I felt MUCH better about eating a sprouted grain muffin than I did any Vanilla JoJo’s I might have picked up from Trader Joe’s!  (those cookies are just so delicious!)

And, since pulling all-nighters is something I simply do. not. do. caffeine was necessary. I never even pulled all-nighters in college… I just couldn’t do it.

But, as a non coffee drinker… the caffeine selection was limited. But thankfully, I always have a bottle of instant espresso powder stashed in my freezer for pairing with chocolate goodies! And pair my espresso with chocolate I did! Coffee and I…we don’t get along very well. I like a little sweetness in my life. But Mochas…on the other hand… simply a perfect match!

Coffee flavored with chocolate? What could be better!

Clearly, I’m in study mode.

But at midnight I came up with this quick little skinny mocha that kept me working though the wee hours of the morning.

To accomplish my stay-up-all-night concoction, you will need…

  • 1 cup unsweetened almond milk
  • 1 tablespoon of chocolate chips
  • 1 packet stevia
  • 1 tablespoon cocoa powder
  • 1 tablespoon (or more) of instant espresso powder

In a microwave safe mug, combine the milk and chocolate chips and heat in the microwave until hot and chocolate chips melted, about 2 minutes. Once hot, add the remaining ingredients and stir until smooth. Drink and prepare to stay awake all night.

Now, as if I wasn’t tired enough… I’m off to work off the rest of my non-existent energy at bootcamp!
