I’m here with another healthy recipe today, and this time it is a side dish: Roasted Asparagus!
But this isn’t your typical asparagus with barely any seasoning. It is packed with delicious flavors that complement one another and explodes with flavor when you take a bite. Have as an accompaniment to your favorite chicken dish, or serve alongside a beautifully grilled steak.
Whatever you do, don’t forget the Meyer lemon. A little bit sweeter than your typical run-of-the-mill lemon; a little squeeze of this brings the asparagus to life!
Test this out at your next dinner when you’re looking for something new. Vegetable sides can be boring sometimes, I’ll admit it. This, however, will excite your taste buds and leave you wanting a second helping. Disappointment will not happen!
Lemon Scented Asparagus
- 1 pound asparagus
- 1 tablespoon olive oil
- 6 large sun dried tomato halves, roughly chopped
- 3 tablespoons slivered almonds
- 2 garlic cloves, finely minced
- salt and pepper to taste
