What I love about being home:
- Sleeping in my huge comfy bed
- Spending time with my wonderful friends and family
- Eating delicious dinner’s out at new restaurants
I have done all of the above since I have been in Kentucky for the past 2 days. Sunday was a very productive day as well! I got into town around noon, and my Mom and I went straight to lunch!
First stop of the Louisville Food Tour for the day was Coal Artisan Pizza. My mom had been there before and recommended it, so a pizza lunch it was! Since we were both STARVING, we needed a appetizer that could come out fast! So, caesar salad it was!
The homemade croutons really made the salad.
For the pizza, coal prides themselves on a SUPER hot coal fired oven (around 1000 degrees F). This temperature gives the pizza a nice slightly charred crust on the outside, yet the interior still stays a bit chewy!
We did the make-your-own pizza option, with a red sauce for the base, topped with cherry tomatoes and soppressata. Delicious and filling! We split the pizza AND had slices leftover to take home! And they interior of the restaurant had a nice atmosphere.
They didn’t even mind me wearing my just-off-the-plane yoga pants and t-shirt. Comfortable and causal!
Next up on the Sunday Restaurant Tour, was dinner at Wiltshire’s on Market. This restaurant came along after the widely successful Wiltshire Pantry catering company wanted a gourmet restaurant experience to expand their cooking repertoire. They offer a more upscale and fancy dinner experience for a great price!
Started the meal with some bubbly cava + pomegranate liqueur
I love that this restaurant’s menu has an emphasis on fresh and locally grown food. The menu changes weekly, so each time you go, there are new options to choose from! My mom and I had a lovely three course meal (we split each course) to get a full range of samples from the restaurants.
First Course: Butternut Squash Empanadas with Chipotle Aioli
Second Course: Flatbread with Orange and Olive Marmalade, Duck Confit, Manchego, & Local Arugula
Main Course: Herb Rubbed Beef Hanger Steak with Duck Fat Fingerlings, Roasted Carrots, Parsnip Puree, Crispy Shallots, and a Black Peppercorn Demi Glace
All amazing and well worth a repeat trip!
