I went on a bit of a picture taking spree the other day. My afternoon was free, the sun was out, and I had just made this amazingly vibrant orange citrus vinaigrette that was just begging to be photographed. So I set up a make-shift “studio” (aka: a chair and a white poster board) and played around with the manual mode.
And to my surprise, I got some wonderful shots!
I’m still learning about all the functions and settings on my camera, but I felt this was a good start! And I think I might need to always shoot in manual mode. It just turns out a little better than the “food” setting and I can get the exact focus that I want.
But back to the food!
I found some beautiful cara cara oranges during Citrus Fest at Central Market. Once I cut into the flesh, I knew they needed to be juiced! So I decided to make a salad dressing!
I’m not sure what it is about these oranges, but once you slice into it, it looks exactly like a mini grapefruit. But it tastes like an orange! The flavors meld perfectly with the olive oil I found. At Whole Foods Market, they have infused olive oils. If you do NOTHING else, just go get yourself a batch of their Rosemary Olive Oil. You will become instantly addicted.
Mix the orange juice with the olive oil, add a dash of salt and pepper. Seal up your jar (the best device to make dressing in, in my opinion) and shake away! Pour over your favorite salad greens and eat. I have a hunch this stuff will also be wonderful over grilled chicken.
This vinaigrette brings be back to summer days laying out on a boat in North Carolina. Wake-boarding, tanning, and relaxing is exactly what I wish I was doing right now. I am seriously longing for summer. Good thing I live in Texas and 70 degree weather is on it’s way! If you don’t live in the south, go right now and make this dressing. You will feel warmer immediately!
Orange Citrus Vinaigrette
- 2 medium size cara cara oranges
- 2 tablespoons rosemary olive oil
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
