I spy candy canes!!!

You know what that means right? A festive holiday treat is on your way!! And did you know, Whole Foods does NOT stock candy canes yet?!? I know…crazy. Luckily I live within a one mile diameter of about 4 different grocery stores, so I wasn’t at a total loss. And just look at how festive candy canes can make a simple no-bake dessert:


Peppermint + Chocolate + Marshmallows = a very addicting crispie treat

These are not JUST your run of the mill rice crispie treats. For one thing, the cereal I used is a whole grain brown rice cereal, rather than the typical refined puffed rice one in the big blue box (you know what I’m talking about). If you’re going to cover something in butter and marshmallows, you might as well add a little bit more nutrition to it! The brown rice cereal has more fiber and protein than the normal, but you’d never know the difference.

And you can’t go wrong with peppermint and chocolate in my book. But first things first for this treat! You want to smash up your candy canes into many little pieces!

And I’m pretty sure that was the hardest part of the whole recipe. To be honest, I haven’t made rice crispie treats in YEARS! I think it’s because I never wanted to clean a very sticky-marshmallow pot. But it was totally worth it!

They remind me of elementary school; getting a rice crispie treat at lunch made for an exciting day.

These also make the day more exciting, but in a more grown up way. And don’t expect these to stick around for very long. Too delicious not to devour each and every one of those little squares by the next morning.

Peppermint Crispies

  • 2 tablespoons butter
  • 5 cups mini marshmallows
  • 4 cups brown rice cereal
  • 1 cup dark chocolate
  • 1.5 tablespoons butter
  • 2 tablespoons milk
  • 3/4 teaspoon peppermint extract
  • 10 – 12 mini candy canes, crushed

Take a 9 x 9 inch glass pan, and spray with cooking spray. Set aside.

In a pot of medium low heat, melt the butter. Once melted, add in the marshmallows and immediately and continuously stir the mixture until all marshmallows are melted and smooth. Add in the cereal and mix until evenly coated.
Immediately pour mixture into prepared pan and using greased hands, spread the mixture evenly in the pan. Set aside to cool for 15 – 20 minutes.
In the mean time, combine the chocolate, butter and milk into a microwave safe bowl. In 15 second intervals, melt the chocolate, stirring after each interval. When completely smooth, add in the peppermint extract
When the crispie treats are cool, cut into 1.5 inch squares.
Dip each square into the chocolate mixture and sprinkle with the crushed candy cane pieces Repeat with all treats!
Allow to set for 10 minutes and enjoy!
