Don’t these look amazing?!?!? I promise we’ll get to the rich chocolate dessert, but first a pre-Thanksgiving recap!
I’m finally home in Kentucky for Turkey Day!!! Luckily, we didn’t really have any class, so I’m able to spend a whole week at home this year! Last year I just got a few days off for Thanksgiving, so that was a quick in and out trip. And due to my extra-long time at home, I’m able to make a lot of different foods for Thanksgiving.
Here’s the run-down of my Thanksgiving meal plan:
- Apple Cider Brined Turkey Breast
- Cornbread Stuffing (made with homemade cornbread of course!)
- Sweet Potato Rolls
- Sauteed Green Beans
- Pumpkin Whoopie Pies with a Marshmallow Frosting
And of course I’ll provide you all with recipes of this amazing feast! We always go to my Aunt and Grandmother’s house in Tennessee, so there will be a lot of other side dishes to choose from. I’ll document everything!

Peppermint Chocolate Brownie Bites
They are even more delicious then they look! There’s also a secret to these brownies….. they are GLUTEN FREE!! Yes I know, how could a delicious mint flavored gluten free brownie ever stand up to the richness and tenderness that are regular brownies?
Well, believe it or not, these were almost better than my standard go-to brownie recipe. And while these aren’t necessarily difficult to make, they are rather time consuming. But that’s what the holidays are for right? Spending excess amounts of time in the kitchen to produce some extra special holiday treats!
And from the feedback I’ve gotten on these brownies, I’m not sure anyone really even noticed they were gluten-free! Just extra yummy and perfect for those gluten intolerant in your family! And since they are small, you’re allowed to have two, three, or five right?! haha remember! Everything in moderation (my nutrition plug for the day). 🙂
Gluten Free Peppermint Double Chocolate Brownie Bites
- 5 oz dark chocolate chips
- ½ cup butter
- 2 large eggs
- ½ cup brown sugar
- ¼ cup brown rice flour
- 1/3 cup almond meal flour
- ½ tsp salt
- ¼ tsp baking soda
- 2 tsp vanilla extract
- 4 tablespoons butter, softened
- 1.25 cups powdered sugar
- 2 – 2.5 tablespoons milk
- 1/2 teaspoon peppermint extract
- 4 – 5 drops green food coloring
- 1 cup dark chocolate chips
- 1.5 tablespoons butter
- 1 – 2 tablespoons milk
Preheat the oven to 350 degrees F. Grease an 8×8-inch square baking pan well. Using the microwave, melt the dark chocolate and butter together in a large (microwave safe) bowl. Stir the chocolate mixture after every 20 second interval in the microwave. Stir together to combine. Set aside.In a mixing bowl, beat the eggs on medium high till frothy. Add the brown sugar and vanilla extract and beat until the mixture is smooth. Add the melted chocolate mixture into the egg-sugar mixture a little at a time – incorporate it slowly- and beat well for a good minute. The chocolate will look smooth and glossy.
In a bowl, combine the dry ingredients: almond meal, rice flour, fine sea salt and baking soda; whisk together. Add the dry flour mixture into the chocolate mixture and beat until just combined. Spread the batter evenly into the prepared baking pan.
Bake in the oven for 15 – 17 minutes, or until the brownies are set. Be careful not to overcook! Allow to cool completely on a wire rack.
