Pizza: It’s What’s for Dinner

Well, that was some election! Due to my 9:30 pm bedtime, I didn’t find out the results until this morning! But I celebrated my voting with cupcakes!

Sometimes I think I patiently wait all day, just to eat my favorite meal…Dessert! Dessert, I don’t know what I would do without you!

Last night’s cupcake was Pumpkin! So moist and full of cinnamon spice flavor.

But moving off of dessert and onto dinner, I had one of my favorite meals:

Homemade Pizza!

As much as I love Il Cane Rosso pizza, I also love staying home and making my own. Then I can use whole wheat pizza crust, and load up my pizza with all the vegetables imaginable. On top of this pizza was:

  • Eggplant basil spread for the sauce
  • Fresh mozzarella
  • Sliced roma tomatoes
  • Minced garlic
  • Caramelized onions
  • Sauteed zucchini and squash
  • Hot Italian chicken sausage
  • Goat cheese

And I think that was about it! I really like to overload my pizza with so many delicious flavors. But the absolute BEST part about this pizza weren’t the toppings…. it was the CRUST!

Background: I love pizza crust. For me, it is the best part! Marshall and I often fight over the crust when we make pizza because he would rather have the toppings extend all the way out to the edges. I need a defined crust edge. Yes, sometimes we argue over food….it just happens!

There are certain advantages of living alone: I can make the best pizza crust edge ever, with no one to argue with me (I take my food seriously). But this time I went a little crazy. Take a look at dinner:

Looks pretty normal right? Slice of pizza and caesar salad on the side. Completely normal combination. But take a good hard look at that crust.

THERE’S CHEESE IN THERE

Yes, I did it. Stuffed crust pizza! My favorite thing in the entire world, and so easy to do!

All you need are a few string cheese, cut in half lengthwise. You just take the cheese and roll in up in the crust before baking! So simple, but the outcome is so satisfying!

And these stuffed crust pizza is A MILLION times better for you than the delivery or frozen stuffed crust pizza. You won’t regret eating this afterwards! Here’s another look at that delicious cheesy crust:
