Protein Blueberry Oatmeal

It’s a Snow Day!!

The snow started falling yesterday, and it is a winter wonderland outside! While an unexpected break from work was rather nice, I was more excited to finally get a day to sleep in. I don’t know about you, but sleep is a major priority in my book. But with any chilly morning, I like to start my day with a piping hot bowl of oatmeal.

Blueberry Oatmeal I love to switch up my oatmeal flavors now and again, but this has been my favorite morning oat combination lately.

Blueberries + Chocolate-Haselenut Spread + Granola

Regardless of the flavor, my oats always start the same way. Here’s my basic oat recipe:

Basic Protein Oats

  • 1/2 cup water
  • 1/2 cup unsweetened almond milk
  • 1/2 cup extra thick rolled oats (I use Bob’s Red Mill Brand)
  • 2 teaspoons cinnamon (optional)
  • 1/3 cup pasteurized egg whites*


In a small pot, heat the water and almond milk over medium heat until simmering. Add in the oats and cinnamon, and reduce the heat to medium low. Allow to cook for 5 to 7 minutes, stirring occasionally.

When almost all of the liquid has been absorbed, remove from the heat, and slowly add in the egg whites, stirring constantly.

Return the oats to the heat, and cook for another 1 – 2 minutes, or until oats “fluff up.”

*I love adding a little extra protein  to my bowl of oats in the morning. The egg white addition adds a nice “fluffy” texture, and the  extra protein really helps to keep me full.

Whole grains + protein = a winning breakfast combo!

Now for the fun part. Here’s how I dress up my morning bowl of protein oats:

Start with the blueberries:

DSC_0307 Either fresh or frozen will work. Since it’s not exactly blueberry season, I opted for de-frosted wild blueberries.

DSC_0323 Then I add a heaping spoonful of chocolate hazelnut spread from Dude Sweet Chocolate. If you can’t get this chocolatey goodness from Dallas, Nutella would work just fine.

DSC_0327 Finally, mix it all together and top it off with a heavy sprinkle of granola.

A perfect and healthy start to your morning.
