There is something so comforting about a bowl of pasta with a rich and flavorful tomato sauce. It’s great for a warm meal on a rainy day, or just a nice hearty lunch!
I put this on sauce all over Trader Joe’s whole wheat gnocchi, and it was perfect!

- 1 – 28 oz. can unsalted peeled whole plum tomatoes
- 1 tablespoon olive oil
- 1/2 yellow onion, diced
- 2 slices thick cut bacon, diced
- 2 tablespoons white wine
- 1 tablespoon garlic, minced
- 1 roasted red pepper, finely chopped
- 1/4 teaspoon crushed red pepper
- salt and pepper to taste
- 2 oz. heavy whipping cream
- 2 oz. vodka
- 1 tablespoon basil, chiffonaded
Take the can of tomatoes, and separate the liquid from the tomatoes. Reserve liquid. In a food processor, lightly pulse the tomatoes until evenly chopped, but slightly chunky. Set aside.
In the bottom of a large pot, heat olive oil over medium heat. Add in onion and saute for about 3 minutes. Then add in bacon and saute for 4 – 5 minutes, or until the bacon is browned and crispy.
Pour out excess grease, reserving 1 tablespoon of bacon grease.
Return bacon grease to pan, and add in white wine to deglaze. Once deglazed, add in garlic and roasted red pepper and cook for 3 – 4 minutes.
Add in crushed tomatoes with liquid, crushed red pepper, salt, and pepper. Simmer for about 30 minutes.
Immediately prior to serving, add in vodka, whipping cream, and basil.
Serve over your favorite type of pasta!
