Speedy Weeknight Dinner

There are just those nights when you are so tired, you just don’t want to make dinner, but you have nothing to eat in the refrigerator. What to do? Do you go pick something up from a restaurant? Of course, not! You make this quick and speedy dinner!

This dinner is super simple and delicious. And it took less than 30 minutes, start to finish, for dinner to be on my plate. Exactly what I needed after an hour of bootcamp! So next time you are in a rush, try out this meal for dinner. Healthy and satisfying!

Healthy Quinoa Salad

Ingredients

  • 1 cup tricolored quinoa
  • 2 teaspoons olive oil
  • 2 teaspoons butter
  • 1/2 small onion
  • 2 teaspoons garlic, minced
  • 2 medium zucchini, sliced
  • 4 – 5 small tomatoes, quartered
  • 5 cups raw spinach
  • parmesan cheese to taste
Directions

Cook quinoa according to package instructions

In a large skillet, sauté the onion in olive oil + butter over medium heat until soft and golden. Turn the heat to medium low and then add in the garlic and zucchini. Cover and cook for 5 minutes.

Then uncover and turn the heat to medium high and cook for another 5 minutes, or until vegetables are browned and soft.

Add in the tomatoes and cook for 2 more minutes. Once warmed, add in the cooked quinoa, spinach, and lemon juice. Combine everything together and remove from heat once the spinach, just begins to wilt.

Serve and add parmesan cheese to taste!
